Recipe: Simple Baked Eggs, w/ Cheese, Mushroom, and Spinach


When I'm on my no carb kick, I need something that'll keep me full. A few years ago, I used Neris and India's Idiot-Proof-Diet and they introduced me to baked eggs. Ever since then, I've made several variations, but this is my favorite. It's very quick and extremely simple.


You'll need: 


  • 3 Eggs
  • Handful of spinach leaves (about 1/3 cup)
  • Handful of sliced mushrooms (about 1/3 cup)
  • Shredded Cheddar Cheese (about 1/3 cup) 
  • Muffin pan (Desired size)
  • Oil spray (I used olive oil.) 
Set your oven to 350 degrees. Spray light coat of oil into your pan. Layer your ingredients in this order: spinach, eggs, cheese, mushrooms. I used one and a half egg for each baked egg and split the other ingredients half/half, as well. I used a flat muffin pan from Sur La Table that I absolutely love. 





Bake for 20 minutes, let cool for 5 minutes, and enjoy! I had mine with chicken apple sausage. Swoon. Let me know how yours turn out!
